Ham and Cheese Brunch Squares


Here is another Real Food Real Fast recipe from pampered chef. I’ve tried these and they are fantastic.

Ham and cheese brunch squares Pampered Chef Brunch Squares

You will need:

  • 1 teaspoon of vegetable oil
  • 2 cups of grated Colby & Monterey Jack cheese blend (keep them divided into 2 cups)
  • 1 22.5 ounce package of 10 thawed frozen toaster hash brown patties
  • 8 ounces of softened cream cheese
  • 12 eggs
  • ½ of a teaspoon of coarsely ground black pepper
  • 8 ounces of thickly sliced deli ham
  • 5 green onions with the tops, divided (1 cup sliced)
  • 3 plum tomatoes
  1. Preheat your oven to 450°F. Lightly brush the Large Bar Pan with oil using the Chef’s Silicone Basting Brush. Then grate the cheese using the Ultimate Mandoline. Crumble the hash browns over the bar pan pressing it gently into an even layer. Sprinkle half of the cheese evenly over the hash browns. Bake for 13-15 minutes or until the crust starts to brown and the cheese is melted.
  2. While the crust is cooking, use the Classic Batter Bowl to whisk the cream cheese until it is smooth using the Stainless Whisk. Gradually add the eggs and the black pepper and continue whisking until it is smooth. On the Cutting Board, coarsely chop ham using the Food Chopper. Slice the green onions, reserving ¼ cup of the tops for garnish. Place the ham and remaining green onions into the 8-in. Sauté Pan. Then cook and stir over a medium heat for 2-3 minutes or until hot. Stir the ham mixture into the egg mixture using the Small Mix ‘N Scraper.
  3. Remove the bar pan from the oven and place it on the Stackable Cooling Rack. Pour the egg mixture over the crust. Return the bar pan to oven and bake for 6-8 minutes or until the center is set. Meanwhile, slice the tomatoes in half lengthwise using the Utility Knife and scrape out the seeds. Garnish the squares with the sliced tomatoes and green onions. Cut into squares and serve using the Mini-Serving Spatula.

Kristen’s Tips: I generally soften the cream cheese by microwaving it on HIGH for 15-20 seconds or until it is softened. Then I Whisk it until it is smooth. I also like to use bacon instead of the deli ham sometimes. 1 pound of cooked, drained and crumbled bacon is generally enough.
